My first post ever: Introduction to my story

Hello!  I’m Lynn, a happy French Canadian mother of four children and an elementary teacher living in Orléans, Ontario.  I enjoy reading, spending time outside, gardening, and cooking among other things.

At the age of 20, I was diagnosed with Irritable Bowel Syndrome after having a colonoscopy and a barium enema. I was told I had to live with it, which I did for a long time.  When my third baby was born in 1995, I had to take her to the doctor when she was just a few weeks old as she was crying all the time, and had a bad rash all over her body.  The doctor asked me if I was breastfeeding and I was.  He told me to remove all dairy products from my diet and see how things go in a day or so.  I went home, removed all dairy from my diet that very day, and my daughter started to sleep well, stopped crying, and the rash went away.  Sanity returned into my life!  But, along with being able to sleep, I noticed that my bowel symptoms improved drastically.  I had less bloating, less cramping and digested my food better.  I also lost my excess pregnancy weight a lot faster than with my other two older children.  Bonus!  That was my first experience at achieving better health because of a diet change.

Later, I became a vegetarian for a few years.  Another episode of improved health although I was still experiencing a lot of bowel symptoms.  These symptoms became worst over time until at age 48 I reluctantly read the book Wheat Belly by  William Davis.  I’m saying reluctantly because I was a firm believer that whole grains, including wheat, were excellent for your health and they were part of my diet on a daily basis.  After reading the book, I was still skeptical but willing to give the gluten-free diet a try thinking and secretly hoping I would prove it wrong.  So I removed all gluten containing products at once and to my surprise, my health improved drastically once again!  After two weeks of eating healthy gluten-free meals I noticed many improvements in my overall health.  I could sleep better!  Along with better sleep, my brain fog left and I was able to concentrate for long periods again.  Better still, my bowel symptoms improved and I lost 35 pounds very quickly!  Plus my joint pain improved.  Wow! I was hooked! I have been converting my recipes into healthy gluten free recipes ever since!  My story doesn’t end here though…I have a lot more to tell you about my  health and cooking in my next posts!

My hope is that the information that I publish on this blog will help you achieve better health and help you understand that healthy food choices can improve your vitality and give you a sense of well being that are well worth the effort of eliminating gluten from your diet.  Thank you for reading my first post!
